This Famous Chef Built the Best Bakery in Orange County
Instagram made him famous—but the pastries made him a legend.
1️⃣ The first time we went to Diotima Bakehouse in Mission Viejo, everything was sold out because we got there late.
2️⃣ The second time, the line wrapped around the parking lot.
3️⃣ The third time? No line, fully stocked, and I cried happy tears.
From kouign-amanns to cream-filled croissants to browned butter chocolate chip cookies, we’ve now tried almost everything in the case—and Diotima absolutely lives up to the hype.
The man behind the magic is Kian Moltaji, a classically trained chef who studied in Paris and lives right here in South OC.

Kian said that one of his goals is to make about a million croissants. The one picture above is number 20,000!
It had been his dream to open up a little bakery, but when no one would lease him a storefront, he started posting baking videos to build credibility. One of them went viral—then another—and millions of views later, Diotima opened in 2023.
Now, in 2025, the bakery is legendary, with a rotating menu of sweet and savory French pastries that often take three days to make. The ham & cheese croissant alone is worth the drive.

Absolutely worth the wait, but if you hate crowds, go midweek if you can.
There’s no printed menu and no daily rundown online—just whatever Kian feels like baking that day. Your best bet is to check his Instagram stories (@kianthechef), show up early, and trust the bakery case.

All of these bands have SoCal roots, but only three are Orange County originals:
Berlin was founded by John Crawford in Anaheim, even though the band later made waves in the L.A. music scene.
No Doubt also hails from Anaheim, where Gwen Stefani and crew started out in the local ska scene.
The Offspring formed in Garden Grove, becoming a pillar of OC punk.
But Linkin Park? They came together in Agoura Hills, which is in L.A. County—not the OC. That makes them the odd one out.
